Recipe for Cheesy Spinach Artichoke Dip

What You Need

  • 2 packages thawed frozen cream of spinach
  • 1 can chopped artichokes
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded jack cheese
  • ¼ cup shredded parmesan cheese
  • ½ can chopped water chestnuts
  • 2 minced garlic cloves
  • 2 minced shallots
  • Salt and pepper to taste
  • 1 large round loaf sourdough bread
  • 1 Tablespoon shredded parmesan cheese
  • Assorted chips
  • Assorted crackers
  • Assorted fresh vegetables

How to Make It

Using a large mixing bowl you will add the thawed cream of spinach, chopped artichokes, mayonnaise, sour cream, shredded mozzarella cheese, shredded jack cheese, shredded parmesan cheese, and chopped water chestnuts, the minced garlic cloves, minced shallots, salt and pepper to taste. Mix well to combine. Cover with tight fitting lid or food wrap. Place in the refrigerator to chill overnight.

Preheat the oven to 325 degrees Fahrenheit.

Carve the inside out of the round loaf of sourdough bread to create a bowl. Scoop out the pieces and cut them into bite size pieces. Place the bread bowl onto a large baking sheet. Pour the cheesy spinach dip into the middle of the bread bowl. Sprinkle with the remaining parmesan cheese over the top of the dip. Arrange the bread cubes around the loaf.

Place the baking sheet into the preheated oven and bake for about 20 to 30 minutes or until the bread and dip are heated through and the dip is bubbly hot. However, be careful not to burn the bread cubes. Remove from oven and allow about 10 to 15 minutes for cooling. Serve with assorted chips, crackers, and or assorted fresh vegetables.
