Easy Vegetarian Recipe

Some great easy vegetarian recipes that you can make and try for yourself.

POTATO SALAD
Boil potatoes that are firm and waxy when cooked, and cut them in slices; let them soak in ½ gill of water, grate a small onion and mix it with these; add pepper, salt, vinegar, and oil to taste. The quantity of oil should be about three times the amount of the vinegar used. Eat with Allinson whole meal bread.

APPLE FRITTERS.
three good juicy cooking apples, three eggs, six oz. of Allinson fine wheat meal, ½ pint of milk, and sugar to taste. Pare and core the apples, and cut them into rounds ¼ inch thick; make a batter with the milk, meal, and the eggs well beaten, adding sugar to taste. Have a frying-pan ready on the fire with boiling oil, vege-butter, or butter, dip the apple slices into the batter and fry the fritters until golden brown; drain them on blotting paper, and keep them hot in the oven until all are done.
CELERY CROQUETTES.
one or two heads of celery, a teacupful of dried and sifted Allinson breadcrumbs, two eggs, pepper and salt to taste.
Well wash the celery, remove the coarse outer stalks, and steam the parts used until they are a little tender. Then cut them into pieces about two inches long, dip them first into the egg whipped up, then into the read crumbs, and fry them in boiling butter, vege-butter, or olive oil until a nice brown; dust with pepper and salt, and serve up very hot; eat with white or tomato sauce.
